Aracena and the dehesa

Despite it's lack of marketing, Spain surely has the best ham in the world.  A big factor is the dehesa, a field of oak trees that drop acorns that give the pigs a healthy, flavorful fat.  These are found in western Spain and one of the best is found in and around Aracena, Huelva.  We took a great tour of the fields, the drying rooms and finally had a chance to taste different hams as if it were a wine tasting.  I'll let the photos do the rest of the talking.  We then went into the town of Aracena to see its cavern and climb its hill to the fort/church.
