Aracena

Today we visited a pig farm just outside of Aracena in the province of Huelva.  Most consider Spanish ham that is called Ibérico de bellota the best in the world.  Among these hams, Huelva might produce the best.  It is a combination of the breed of pig, the open space life it leads, and the natural way it feeds, especially of the acorns of the cork and encina trees.  The curing process is also a vital component.  We then hiked to the top of Aracena and then into its famous cave.
