Central Market

Today we had one of my favorite classes, a tour of the Central Market with one of Valencia's top chefs, Jordi Morera.  Valencia has Europe's best produce market and Jordi showed the boys how he chooses his ingredients for his restaurant.  We then went back to his restaurant where we did a tasting of some of Spain's most important food items: olives, olive oils, cured fish, cheese and, of course, ham.  We then had some free time before returning to a wonderful meal of Paella with many appetizers, including the local and very tasty mussel called clóchina.
